This recipe is from the November 2013 issue of Yummy magazine (Super Easy Sweets on the cover). I purchased this back issue at 50% off. I knew it would come in handy.
Vanilla Cupcakes
Vanilla Cupcakes
1 1/2 cups butter
1 1/4 cups white sugar
6 medium eggs
1 tablespoon vanilla extract
3 cups cake flour
1 tablespoon baking powder
3/4 cup milk
1. Preheat oven to 350 degrees Fahrenheit. Line 2 (12-cup) standard- size muffin pans with cupcake liners. Set aside.
2. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy.
3. Add eggs one at a time. Add vanilla extract, making sure to scrape bottom of the bowl with a spatula.
4. Combine cake flour and baking powder in another bowl. Gradually add half of the dry ingredients to the batter.
5. Add milk, making sure to scrape the bottom and sides of the bowl. Add the rest of the flour mixture and mix until well combined.
6. Scoop batter into prepared cupcake liners until 2/3 full. Bake in the preheated oven for 15 to 18 minutes or until a cake tester inserted in the center of a cupcake comes out clean.
7. Cool cupcakes completely on wire racks before frosting.
Buttercream Frosting
1 cup butter, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract
1 tablespoon milk
1. Using an electric mixer fitted with the paddle attachment, beat softened butter until smooth.
2. Add confectioners' sugar and vanilla extract. Mix until well combined.
3. Add milk to adjus tconsistency. For thicker frosting, add more confectioners' sugar to the mixture.
4. Frost cooled cupcakes immediately. \
