I saw some dessicated coconut in the cupboard. I got a light bulb moment - macaroons! I remember when I was still in grade school or high school, we did something like this for our Home Economics. So I scoured the net for a recipe. And stumbled upon this website -

I prepared all the ingredients and enjoined the kids to help out. It was so simple and it was a huge hit.
Sarap! Success in my book involves, being eaten right away
and/or being saved for school's baon the next day. Both were achieved
by this homemade experiment. And by the way, I forgot to put in the vanilla. But just the same, our house was filled with that sweet mama-is-baking-something smell. And it still tasted good. Oh did I say, it tasted good?
Ingredients:
- 1/3 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup flour
- 2 cups desiccated coconut
- 1/2 teaspoon vanilla extract
Procedure:
- In
a bowl, cream butter using a hand mixer on low speed. Add sugar and
beat together until well blended and fluffy. Add eggs one at time,
beating continously. Add condensed milk and vanilla extract and continue
to beat until blended.
- In a medium bowl, combine flour and desiccated coconut. Add to egg mixture and beat until combined.
- Scoop
into paper-lined mini muffin pans and bake in a 350 F oven for about 15
to 20 or until golden. Allow to cool for about 5 minutes.
